Gooey Marshmallow Cereal Treat Brownies
Yield: 9 brownies
Prep Time: 20 minutes / Bake Time: 35-40 minutes
Ingredients
Brownie Batter
- ½ cup unsalted butter, browned
- 4 ounces semisweet chocolate bar
- ½ cup white granulated sugar
- ½ cup brown sugar
- ½ teaspoon salt
- 3 eggs
- 1 teaspoon vanilla extract
- ½ cup cocoa powder
- ½ cup all purpose flour
Marshmallow Topping
- 10 ounce bag of marshmallows
- 5 tablespoons unsalted butter
- 3 cups cocoa puff cereal
Directions
Preheat the oven to 350 degrees Fahrenheit and prepare a baking dish with parchment paper. Set aside.
In a saucepan, melt the butter until it’s brown and nutty. Then pour this into a large mixing bowl along with the chocolate bar pieces.
Let sit for a few seconds and then stir the two ingredients together until the chocolate chips melt completely.
Add in both the salt, white and brown sugars and whisk until combined.
Add in the other wet ingredients of vanilla and eggs. Whisk again until smooth.
Now add in the cocoa powder and flour and fold into the batter until incorporated completely and a thick batter is formed.
Transfer this batter to the prepared baking dish and spread evenly.
Bake in the oven for 35-40 minutes or until a toothpick inserted comes out clean.
Once they are done, remove from the oven and let cool completely.
While those cool, take a large pot and make the cocoa puff marshmallow topping.
Add the butter to a saucepan over medium heat and melt completely.
Add in the marshmallows, stirring every minute or so until melted and smooth.
Pour in the cocoa puff cereal and stir into the marshmallow mixture.
Coat the cereal evenly and then pour this on top of the brownies.
Press and spread the cocoa puff mixture to fit into the baking dish.
Let sit at room temperature for an hour. Then cut into squares with a sharp knife. Serve and enjoy.
FAQ
Can I use boxed brownie mix instead of homemade brownies?
Absolutely! If you’re short on time, boxed brownie mix works just fine—just prepare it according to the package instructions before adding the marshmallow cereal topping.
What kind of chocolate cereal should I use for the topping?
We used Cocoa Puffs cereal but any chocolate-flavored puffed rice cereal (like Cocoa Krispies or Cocoa Pebbles) will work great for that crunchy, chocolatey layer.
Could I use a different type of cereal for the topping?
Sure! Anything that goes well with chocolate could work – regular Rice Krispies, Captain Crunch, or any peanut butter flavored cereal would be amazing.
How do I store these marshmallow brownies?
Store them in an airtight container at room temperature for up to 3 days, or in the fridge for up to 5 days (allow them to come to room temperature before serving.)
