Red Peppermint Biscoff Cookies
Makes: 12
Prep: 15 Minutes / Cook: 5 Minutes
Ingredients:
- 1 Package Red Candy Melts
- 1 Package Biscoff Cookies
- Peppermint Sprinkles (or crushed peppermint candies)
NOTE: I used Great Value Peppermint Candy Cane Sprinkles from Walmart
Equipment:
- Parchment Paper
- Piping bag
- Bowl for sprinkles or crushed peppermints

Instructions:
Melt red candy melts according to directions on bag. I used a piping bag to make it easier to drizzle the candy on the Biscoff cookies. I did not need to use the whole bag for 12 cookies.
Cut a small hole in the bottom of the piping bag. Working with one cookie at a time, pipe the red candy into the center of the cookie using a zigzag motion. I piped the candy into the center, leaving the edges bare.

While the candy is still wet, apply the peppermint sprinkles or crushed peppermints.

Place the cookies on parchment paper until the candy hardens.

Allow the candy to set for at least 30 minutes before serving. Store in an airtight container for up to 1 week.
Enjoy!

Frequently Asked Questions
1. Can I use something other than candy sprinkles for topping?
Absolutely! Crushed peppermint candies or candy canes make a great substitute and add an extra burst of minty flavor.
2. Do I need to melt the red candy melts before decorating?
Yes — gently melt them according to the package directions (usually in the microwave or a double boiler) until smooth, then drizzle your cookies for that glossy, festive finish. I used a piping bag to make decorating and cleanup easier!
3. How should I store these Peppermint Biscoff Cookie Treats?
Keep them in an airtight container at room temperature for up to 5 days. If you’re in a warmer climate, you can refrigerate them to prevent the candy melts from softening.
4. Can I make these ahead of time?
Definitely! You can prepare and decorate them a day or two in advance — just be sure they’re fully set before stacking or packaging to keep the decorations intact.

Tips & Tricks
- Use parchment paper to keep your cookies from sticking while decorating and drying.
- Don’t overheat the candy melts — melt them slowly and stir often for a smooth, glossy finish.
- Add sprinkles right away after dipping or drizzling so they stick before the candy coating hardens.
- Crush peppermint candies inside a zip-top bag with a rolling pin for easy cleanup and even pieces.
- For extra holiday flair you can use white or green candy melts too and vary how many you make of each color.
With their sparkling red drizzle, crunchy peppermint bits, and cozy Biscoff spice, these Peppermint Biscoff Cookie Treats are pure holiday cheer in every bite! They’re as fun to make as they are to eat — perfect for spreading sweetness at parties, gifting to friends, or enjoying by the fireplace with a mug of cocoa. So grab your sprinkles, turn on those twinkle lights, and let the cookie magic begin. After all, the holidays are meant for a little extra sparkle (and a lot of cookies)!
