Red, White, & Blue Fruit Salad

Prep time: 10 minutes

Ingredients

  • 1 Pink Lady apple
  • 1 lbs strawberries, quartered
  • 1 lbs blueberries

Instructions

Wash strawberries by rinsing under water. Remove tops, then quarter the strawberries and put them into a large mixing bowl.

Wash the blueberries and then add them to the bowl with the strawberries. Toss to mix.

Create the apple stars by washing the pink lady apple. Cut the apple into 1/4″ slices. Using a small, star-shaped cooke cutter, cut the apple slices into stars.

Add the star apple pieces to the bowl with the other fruits. Toss everything gently to mix.

Note: if you are preparing the fruit salad ahead of time, you can use lemon juice to keep the apple stars from turning brown. Before adding the apple stars to the rest of the fruit, create a water bath for them with a ratio of 1 tablespoon of lemon juice to 1 cup of water. Soak the apple stars for 3 to 5 minutes, then drain and rinse them. You can then add them to the fruit salad and keep it chilled and covered until ready to serve.

Variations:

  • If you’d like, you can add other red fruits to the salad. Add things like watermelon, pomegranate seeds, or even seedless cherries or red grapes.
  • Add chopped nuts or candied nuts, like walnuts or pecans.
  • Add dried fruits, like raisins, cherries, or cranberries.
  • Serve with whipped cream or Cool Whip.
