Lemon Poppy Seed Cupcakes with Lemon Frosting

For the cupcakes
- 1 cup sugar
- 1 Tbsp lemon zest
- 1 ¾ cups flour
- 1 Tbsp cornstarch
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 12 Tbsp unsalted butter, melted
- ½ cup sour cream
- 1 tsp lemon extract
- ¼ cup milk
- 2 tsp poppy seeds
- ¼ cup lemon juice
For the frosting
- 12 Tbsp unsalted butter, softened
- 4 cups powdered sugar
- 1 Tbsp lemon zest
- ¼ cup lemon juice
- 2 Tbsp milk
Lemon wedges, to decorate
Additional poppy seeds, to decorate
Directions
Preheat the oven to 350 degrees. Line two standard muffin tins with cupcake liners, set aside.
In a food processor, combine the sugar and lemon zest. Pulse for about a minute or until the sugar is a pale yellow color.
In a medium bowl, combine the sugar, melted butter, eggs, sour cream, lemon extract and milk. Whisk to combine.
In another medium bowl, combine the flour, corn starch, baking powder, baking soda and salt. Whisk to combine.
Combine the wet ingredients with the dry. Mix well.
Add in the poppy seeds and lemon juice. Mix just until combined.
Use an ice cream scoop or similar to divide the batter between the cupcake liners until about half full.
Bake in the preheated oven for 15-18 minutes or until the center is set and spongy to the touch. Allow to cool completely before decorating.
For the frosting – in the bowl of a stand mixer, combine the softened butter, about half of the powdered sugar, lemon juice and the vanilla. Mix on low just until combined.
Add the remaining powdered sugar and the milk. Mix on low until combined and then bump up the speed to medium and whip for an additional minute or two, until the frosting is smooth and fluffy. Scrape the sides as needed.
Transfer the frosting to a piping bag fitted with a large star tip.
Once the cupcakes are cool, pipe a large mound on top of each cupcake. Sprinkle with additional poppy seeds and a lemon wedge, if desired.
